Description

Ingredients

  • 2 pounds potatoes, diced
  • 6 strips bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Begin by boiling the diced potatoes in a pot of salted water for about 10-15 minutes, or until tender. Drain and let them cool.
  2. In a large bowl, combine the sour cream, mayonnaise, salt, and pepper. Whisk until smooth and well-blended.
  3. Once the potatoes are cooled, add them to the bowl along with the crumbled bacon, shredded cheddar cheese, and sliced green onions. Gently toss until evenly coated.
  4. Transfer the potato salad into the refrigerator and chill for at least one hour before serving.
