Description
A creamy, spicy one-pan dinner featuring cheese-filled tortellini in a rich Parmesan-cream sauce with Cajun seasoning, sautéed peppers, and onions.

- 12 oz cheese tortellini
- 2 tablespoons olive oil
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the cheese tortellini until al dente according to package instructions. Drain and set aside.
- In the meantime, measure and grate the Parmesan, mince the garlic, and dice the bell pepper and onion.
- In a large skillet, heat olive oil over medium heat. Add the bell pepper and onion; sauté until softened, about 4–6 minutes. Stir in the garlic and Cajun seasoning, cooking for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan until melted and smooth.
- Add the cooked tortellini to the skillet and toss gently until well coated. Season with salt and pepper and garnish with chopped green onions before serving.
Notes
For even cooking, cut vegetables to uniform sizes. Use freshly grated Parmesan for best flavor. Adjust Cajun seasoning to taste before adding salt.
