- 1 large eggplant
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the air fryer to 375°F (190°C). Wash the eggplant and trim the stem. Cut the eggplant into evenly sized slices or cubes.
- Place the cut eggplant in a bowl, add 2 tablespoons of olive oil, 1 teaspoon garlic powder, 1 teaspoon paprika, and salt and pepper to taste. Toss gently until coated.
- Arrange the eggplant pieces in a single layer in the air fryer basket. Cook at 375°F (190°C) for 15–20 minutes, shaking or turning the basket halfway through.
- Remove the eggplant from the air fryer, taste and adjust seasoning if needed, garnish with fresh parsley if desired, and serve warm.
Notes
Cut evenly for uniform cooking. Avoid overcrowding the air fryer for optimal crispness.
