Description

This low carb casserole combines all the delicious flavors of a cheeseburger into a creamy dish, featuring crispy bacon, browned beef, and melted cheddar.


Ingredients

  • 1 lb ground beef
  • 6 slices bacon, cooked and chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup almond flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup diced onions
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Cook the bacon until crisp, then chop and set aside. In a skillet, cook the ground beef and diced onions over medium heat until the beef is browned and the onions are soft. Drain any excess fat and let the mixture cool slightly.
  2. In a large mixing bowl, whisk the 4 eggs with the heavy cream, garlic powder, salt, and pepper until smooth. Add the cooked beef and onions, chopped bacon, shredded cheddar cheese, and almond flour. Stir until evenly combined.
  3. Grease a 9×13-inch baking dish. Pour the mixture into the dish and spread evenly. Bake for 25–30 minutes, or until the casserole is set in the center and golden on top.
  4. Let the casserole cool for 5–10 minutes before slicing. Garnish with chopped green onions if desired, then serve warm.

Notes

For a brunch twist, top with a fried egg. Store leftovers in an airtight container for up to 4 days, or freeze for up to 2 months.
