- 1 cup cottage cheese
- 1/2 cup fresh blackberries
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
- In a large bowl, combine the shredded chicken, cottage cheese, blackberries, celery, and red onion. Ensure that the chicken is shredded into bite-size pieces and the celery and onion are finely diced.
- Add the Dijon mustard and mix gently to combine. Fold the ingredients with a spatula to keep the blackberries whole as much as possible. Taste and add salt and pepper as needed.
- No cooking required for this recipe. If your chicken is chilled from the fridge, let it sit for a few minutes to slightly warm to room temperature, or use it cold.
