- 1 cup pancake mix
- 1 cup milk
- 1 large egg
- 1/2 cup cooked and crumbled beef bacon
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped pecans (optional)
- Cooking spray or muffin liners
Instructions
- Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or line it with muffin liners.
- In a mixing bowl, combine the pancake mix and milk until just blended. Add the egg, crumbled beef bacon, maple syrup, and vanilla extract, stirring gently until combined. If using, fold in chopped pecans.
- Scoop or pour the batter into the muffin tin, filling each cup about 3/4 full. Bake for 15-20 minutes or until golden brown and a toothpick inserted comes out clean.
- Let muffins cool in the tin for a few minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
For best results, do not overmix the batter. Muffins can be stored in an airtight container for up to 4 days, or frozen for up to 2 months.
