- 2 cups grated carrots
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chopped walnuts or pecans (optional)
- 1/2 cup maple syrup
- 1/2 cup caramel sauce
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, mix together the grated carrots, flour, sugar, brown sugar, vegetable oil, and eggs until well combined.
- In a separate bowl, combine the baking powder, baking soda, ground cinnamon, and salt. Gradually add the dry ingredients to the carrot mixture, stirring until just combined.
- If using, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before drizzling with maple syrup and caramel sauce.
Notes
Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. For longer storage, freeze slices wrapped in plastic for up to 3 months.
