Description

A delightful dessert combining the natural sweetness of carrots with the rich flavors of maple and caramel, perfect for any occasion.


Ingredients

  • 2 cups grated carrots
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans (optional)
  • 1/2 cup maple syrup
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the grated carrots, flour, sugar, brown sugar, vegetable oil, and eggs until well combined.
  3. In a separate bowl, combine the baking powder, baking soda, ground cinnamon, and salt. Gradually add the dry ingredients to the carrot mixture, stirring until just combined.
  4. If using, fold in the chopped walnuts or pecans.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before drizzling with maple syrup and caramel sauce.

Notes

Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. For longer storage, freeze slices wrapped in plastic for up to 3 months.
