Ingredients

- 2 cups of broccoli florets
- 2 cups of cauliflower florets
- 2 cups of carrots, sliced
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 red onion, chopped
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut all vegetables into similar-sized pieces.
- In a large bowl, combine the chopped vegetables with olive oil, garlic powder, dried oregano, salt, and pepper. Toss until well coated.
- Spread the vegetables in a single layer on the baking sheet.
- Roast in the preheated oven for 25–30 minutes, stirring halfway through.
- Remove from the oven, taste for seasoning, and serve hot.
Notes
For added flavor, consider incorporating lemon juice or balsamic vinegar before serving.
