A quick and healthy Mediterranean Chicken Stir Fry featuring bright bell peppers, tender zucchini, cherry tomatoes, and savory feta, all cooked with golden chicken.

- 1 lb chicken breast, sliced
- 2 cups mixed bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Feta cheese, for topping
- Fresh parsley, for garnish
Instructions
- Pat the sliced chicken dry and season lightly with salt and pepper. Wash and slice the bell peppers and zucchini. Halve the cherry tomatoes, slice the red onion, and mince the garlic.
- Warm the olive oil in a large skillet over medium heat. Add the sliced chicken breast and cook, stirring occasionally, until browned and cooked through, about 5–7 minutes.
- Push the chicken to one side, then add the garlic and red onion; cook until the onion becomes translucent, about 1–2 minutes.
- Stir in the bell peppers, zucchini, and cherry tomatoes. Cook for another 5–7 minutes until the vegetables are tender. Season with oregano, basil, salt, and pepper.
- Serve warm, topped with crumbled feta and fresh parsley.
Notes
For a brighter finish, squeeze lemon juice over before serving. Great for meal prep and suitable for variations.
