Description

A bright and fresh salad made with creamy chickpeas, crisp cucumber, juicy tomatoes, salty feta, and briny olives, dressed with lemon and olive oil.

Ingredients

Scale
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the drained chickpeas, diced cucumber, halved cherry tomatoes, diced red onion, crumbled feta, and sliced olives in a large bowl.
  2. Whisk together the olive oil, lemon juice, a pinch of salt, and black pepper in a small bowl until smooth.
  3. Pour the dressing over the salad and toss gently to coat everything evenly.
  4. Garnish the salad with chopped fresh parsley and adjust seasoning with more salt, pepper, or lemon if needed. Serve immediately or chill briefly.

Notes

For a heartier meal, consider adding cooked quinoa or shredded rotisserie chicken. Store the dressing separately if prepping ahead of time to maintain freshness.
