Description

A delicious twist on the classic grilled cheese with Mediterranean flavors, featuring gooey cheese, roasted red peppers, fresh spinach, and olives.

Ingredients

Scale
  • 2 slices of bread
  • 2 slices of cheese (e.g., feta or mozzarella)
  • 1/4 cup of roasted red peppers, sliced
  • 1/4 cup of fresh spinach
  • 2 tablespoons of olives, sliced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Assemble the sandwich by placing the cheese, roasted red peppers, spinach, and olives between the slices of bread.
  3. Place the assembled sandwich in the skillet and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
