- 1 cup lentils, rinsed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
- Start by heating the olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes until softened.
- Stir in the minced garlic, cumin, and oregano. Cook for another minute until fragrant.
- Add the rinsed lentils, diced tomatoes (with juices), vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
- Stir in the lemon juice and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. This soup can be customized with additional vegetables or spices.
