Bright, simple, and full of flavor, these Mediterranean quesadillas feature tangy feta, gooey mozzarella, and tender spinach with sweet red onion. A quick and satisfying meal for any time.

- 3 large tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
- 1/2 red onion, thinly sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat. Prepare the spinach, crumble the feta, and shred the mozzarella. Slice the red onion thinly.
- Add the red onion to the skillet. Sauté the onion until it becomes translucent and soft, about 3–4 minutes. Add the chopped spinach and cook until it wilts, about 1–2 minutes. Season the mixture with salt and pepper to taste.
- Place a tortilla in a separate pan over medium heat. On one half of the tortilla, layer a portion of the spinach and onion mixture, then sprinkle feta and mozzarella. Fold the tortilla over. Cook until the bottom turns golden brown and crisp, about 2–3 minutes, then flip and cook the other side until golden and the cheese melts.
- Repeat the process with the remaining tortillas and filling. Cut each cooked quesadilla into wedges and serve warm.
Notes
Serve hot with lemon wedges or a dollop of yogurt. For best results, reheat in a skillet to keep tortillas crispy.
