- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup kalamata olives, pitted and sliced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Pat the shrimp dry with paper towels. Halve the cherry tomatoes, mince the garlic, slice the olives, zest and juice the lemon, and chop the parsley. Prepare the spinach.
- In a large skillet over medium heat, heat olive oil and add minced garlic, stirring for about 30 seconds until fragrant and golden.
- Add shrimp in a single layer to the skillet and cook until pink and opaque, about 3-4 minutes total, flipping once. Stir in cherry tomatoes, spinach, and olives, cooking for another 2 minutes until tomatoes soften and spinach wilts.
- Turn off the heat and add lemon juice and zest. Season with salt and pepper, tossing gently to coat everything. Serve warm, garnished with fresh parsley.
