Description

These delicious bars combine the crisp taste of cannoli shells with a creamy ricotta and mascarpone filling, topped with mini chocolate chips and pistachios, all on a buttery graham cracker crust.


Ingredients

  • 1 cup ricotta cheese
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed cannoli shells
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios
  • 1 package graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan, optionally lining it with parchment.
  2. In a mixing bowl, combine ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Stir in crushed cannoli shells, mini chocolate chips, and chopped pistachios.
  3. In another bowl, mix graham cracker crumbs with melted butter until it holds together. Press firmly into the prepared pan to form the crust. Spread cheese mixture evenly over the crust.
  4. Bake for 20-25 minutes, or until edges are lightly golden and center is set but still soft. Allow to cool at room temperature, then refrigerate for at least 2 hours before cutting.

Notes

Best served cold. Store in an airtight container for up to 4 days in the refrigerator.
