These delicious bars combine the crisp taste of cannoli shells with a creamy ricotta and mascarpone filling, topped with mini chocolate chips and pistachios, all on a buttery graham cracker crust.

- 1 cup ricotta cheese
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup crushed cannoli shells
- 1/2 cup mini chocolate chips
- 1/4 cup chopped pistachios
- 1 package graham cracker crumbs
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan, optionally lining it with parchment.
- In a mixing bowl, combine ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Stir in crushed cannoli shells, mini chocolate chips, and chopped pistachios.
- In another bowl, mix graham cracker crumbs with melted butter until it holds together. Press firmly into the prepared pan to form the crust. Spread cheese mixture evenly over the crust.
- Bake for 20-25 minutes, or until edges are lightly golden and center is set but still soft. Allow to cool at room temperature, then refrigerate for at least 2 hours before cutting.
Notes
Best served cold. Store in an airtight container for up to 4 days in the refrigerator.
