Description

Bright, minty, and chocolatey, these no-bake protein balls are a quick snack that tastes like dessert while fueling your day.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup chocolate protein powder
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon peppermint extract
  • 1/4 cup mini chocolate chips
  • Pinch of salt

Instructions

  1. In a large bowl, combine rolled oats, chocolate protein powder, almond butter, honey (or maple syrup), peppermint extract, and salt. Mix until well combined.
  2. Fold in mini chocolate chips until evenly distributed.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  4. Place the balls on a lined baking sheet and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator for up to a week.

Notes

For a stronger mint flavor, gradually increase peppermint extract. If the mixture is too sticky, wet your hands slightly or refrigerate the bowl for 5-10 minutes before rolling.
