- 1 lb ground beef
- 1 onion, chopped
- 2 cups frozen mixed vegetables
- 1 can (15 oz) diced tomatoes
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom soup
- 4 cups potatoes, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef and chopped onion over medium heat until cooked through. Drain excess fat.
- In a large bowl, combine cooked beef and onion with frozen mixed vegetables, diced tomatoes, and cream of mushroom soup. Season with salt and pepper and mix well.
- Layer half of the sliced potatoes in a greased baking dish. Pour the beef mixture over the potatoes and top with remaining potatoes.
- Cover with aluminum foil and bake for 1 hour.
- Remove foil, sprinkle cheese on top, and bake for an additional 15-20 minutes until cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
Pair with a fresh green salad or crusty bread. Optional toppings include sour cream or fresh herbs.
