Description

A comforting one-dish meal combining ground beef, vegetables, and creamy cheese, perfect for family dinners or potlucks.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups frozen mixed vegetables
  • 1 can (15 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 4 cups potatoes, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and chopped onion over medium heat until cooked through. Drain excess fat.
  3. In a large bowl, combine cooked beef and onion with frozen mixed vegetables, diced tomatoes, and cream of mushroom soup. Season with salt and pepper and mix well.
  4. Layer half of the sliced potatoes in a greased baking dish. Pour the beef mixture over the potatoes and top with remaining potatoes.
  5. Cover with aluminum foil and bake for 1 hour.
  6. Remove foil, sprinkle cheese on top, and bake for an additional 15-20 minutes until cheese is melted and bubbly.
  7. Let cool slightly before serving.

Notes

Pair with a fresh green salad or crusty bread. Optional toppings include sour cream or fresh herbs.
