Description

A creamy soup with pillowy gnocchi, bright sun-dried tomatoes, and fresh spinach, perfect for a cozy meal.


Ingredients

  • 2 cups gnocchi
  • 1 cup sun dried tomatoes, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Heat 1–2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent and soft, about 4–5 minutes.
  2. Add the minced garlic and chopped sun-dried tomatoes. Cook and stir for about 1 minute until fragrant.
  3. Pour in the vegetable broth and bring to a boil. Add the gnocchi and cook according to package directions until they float and are tender, usually 2–3 minutes.
  4. Lower the heat to a gentle simmer. Stir in the heavy cream or coconut milk, Italian seasoning, and chopped spinach. Cook until spinach wilts, about 1 minute. Taste and season with salt and pepper. Serve hot.

Notes

Garnish with grated Parmesan and drizzle with olive oil. For a dairy-free version, use coconut milk.
