Description

Ingredients

  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract
  • Cream cheese frosting for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until combined. In another bowl, mix oil, eggs, grated carrots, crushed pineapple, walnuts (if using), and vanilla extract.
  3. Gradually combine the wet and dry ingredients, stirring gently until just blended.
  4. Divide the batter evenly between the pans and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool in pans for 10 minutes before transferring to wire racks.

Notes
