Warm, spiced, and creamy, these No-Bake Gingerbread Truffles are a bite-sized holiday treat combining crunchy gingerbread crumbs with soft cream cheese and warm spices, coated in rich chocolate.
Ingredients
Scale
- 1 cup crushed gingerbread cookies
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup chocolate chips (for coating)
- Sprinkles or crushed nuts (optional, for decoration)
Instructions
- Preparation: Gather all ingredients and line a baking sheet with parchment paper. Crush gingerbread cookies to fine crumbs and soften the cream cheese.
- Mixing: In a mixing bowl, combine the crushed gingerbread cookies, cream cheese, powdered sugar, vanilla extract, ground ginger, ground cinnamon, and ground nutmeg. Mix until a sticky dough forms.
- Cooking: Shape the mixture into small balls and place on a baking sheet. Freeze for about 15 minutes. Melt the chocolate chips.
- Finishing: Dip each chilled truffle into the melted chocolate to coat evenly, then place back on the baking sheet and add decorations before refrigerating until the chocolate hardens (10-15 minutes).
Notes
Use good-quality chocolate for a smooth finish. Truffles can be stored in an airtight container for up to 2 weeks or frozen for longer storage.
