- 1 cup olive oil
- 1 cup granulated sugar
- 3 large eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup yogurt or buttermilk
- Zest of 1 lemon
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, whisk together the olive oil and granulated sugar until well combined. Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt or buttermilk, starting and ending with the dry ingredients.
- Mix in the lemon zest, ensuring it’s evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.
