Description

A cozy One-Pot Autumn Beef Stew filled with tender beef, hearty vegetables, and aromatic herbs, perfect for chilly fall evenings.


Ingredients

Scale
  • 2 pounds beef chuck, cubed
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 2 cups carrots, chopped
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add beef cubes to the pot and brown on all sides for about 5-7 minutes.
  3. Stir in the diced onions and minced garlic, cooking until softened, about 3-4 minutes.
  4. Add tomato paste, dried thyme, dried rosemary, salt, and pepper, stirring well for 2 minutes.
  5. Pour in the beef broth and bring to a boil.
  6. Add the diced potatoes and chopped carrots to the pot.
  7. Reduce heat and let the stew simmer for 1.5 to 2 hours until the beef is tender.
  8. Adjust seasoning if necessary before serving.
