- 2 pounds beef chuck, cubed
- 4 cups beef broth
- 2 cups potatoes, diced
- 2 cups carrots, chopped
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add beef cubes to the pot and brown on all sides for about 5-7 minutes.
- Stir in the diced onions and minced garlic, cooking until softened, about 3-4 minutes.
- Add tomato paste, dried thyme, dried rosemary, salt, and pepper, stirring well for 2 minutes.
- Pour in the beef broth and bring to a boil.
- Add the diced potatoes and chopped carrots to the pot.
- Reduce heat and let the stew simmer for 1.5 to 2 hours until the beef is tender.
- Adjust seasoning if necessary before serving.
