- 1 lb (450g) beef sirloin, sliced into thin strips
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz (225g) mushrooms, sliced
- 2 cups beef broth
- 1 cup sour cream
- 2 tbsp Worcestershire sauce
- 8 oz (225g) egg noodles
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the sliced beef in a single layer and brown on all sides, about 2–3 minutes per side. Remove the beef and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion turns translucent and fragrant, about 3–4 minutes. Add the sliced mushrooms and cook until they release their liquid and soften, another 4–5 minutes.
- Return the browned beef to the pot. Stir in the beef broth and Worcestershire sauce and bring to a boil. Add the egg noodles, stir to distribute, cover and cook according to package instructions, about 7–10 minutes.
- Reduce heat to low and stir in the sour cream until smooth. Warm gently without boiling. Taste and season with salt and pepper. Serve hot, garnished with fresh parsley.
Notes
For a deeper flavor, consider adding Dijon mustard or a splash of dry white wine when adding the broth. Use low-sodium broth for better control over salt levels.
