One Pot Chicken Parmesan Pasta

Description

A delightful dinner option that combines the comforting flavors of chicken parmesan with the convenience of a one-pot meal.


Ingredients

  • 2 cups pasta (penne or rotini)
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.
  2. Add the minced garlic to the pot and sauté for 1 minute until fragrant.
  3. Stir in the diced tomatoes, chicken broth, Italian seasoning, and uncooked pasta. Bring the mixture to a boil, then reduce the heat to low.
  4. Cover the pot and let it simmer for about 15 minutes, or until the pasta is cooked and most of the liquid has been absorbed.
  5. Once the pasta is done, stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  6. Serve hot and garnish with fresh basil.

Notes

For extra flavor, try marinating the diced chicken in Italian dressing before cooking. To make it vegetarian, omit the chicken and use more vegetables or chickpeas.
