Description

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can chili beans (15 oz)
  • 2 cups chicken or vegetable broth
  • 2 cups elbow macaroni
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups shredded cheese (cheddar or a blend)
  • Optional toppings: sour cream, green onions, cilantro

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat, breaking it apart as it cooks. Drain excess fat if necessary.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. Stir in the diced tomatoes (with juice), chili beans, broth, elbow macaroni, chili powder, cumin, salt, and pepper. Mix well.
  4. Bring the mixture to a boil, then reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
  5. Remove from heat and stir in shredded cheese until melted and creamy.
  6. Serve hot, garnished with optional toppings like sour cream, green onions, or cilantro.

Notes

For a healthier option, replace ground meat with mushrooms or black beans. Consider using a blend of cheeses for richer flavors.
