Description
A delightful combination of flavors perfect for busy weeknights, combining cheese, chili, and elbow macaroni all cooked in one pot for easy cleanup.
Ingredients
Scale
- 1 lb ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can chili beans (15 oz)
- 2 cups chicken or vegetable broth

- 1 tsp cumin
- Salt and pepper to taste
- 2 cups shredded cheese (cheddar or a blend)
- Optional toppings: sour cream, green onions, cilantro
Instructions
- In a large pot, brown the ground beef or turkey over medium heat, breaking it apart as it cooks. Drain excess fat if necessary.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Stir in the diced tomatoes (with juice), chili beans, broth, elbow macaroni, chili powder, cumin, salt, and pepper. Mix well.
- Bring the mixture to a boil, then reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
- Remove from heat and stir in shredded cheese until melted and creamy.
- Serve hot, garnished with optional toppings like sour cream, green onions, or cilantro.
Notes
For a healthier option, replace ground meat with mushrooms or black beans. Consider using a blend of cheeses for richer flavors.
