  • 1 lb Cajun sausage, sliced
  • 1 tablespoon olive oil

  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes (canned)
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)
  • Chopped parsley (for garnish)

Instructions

  1. Preparation: Bring together your ingredients. Chop the onion and bell pepper, mince the garlic, and slice the sausage. Measure the broth, cream, and diced tomatoes.
  2. Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 4–6 minutes.
  3. Sauté the Vegetables: Add the chopped onion, minced garlic, and chopped bell pepper to the pot. Cook until softened, about 3–4 minutes.
  4. Mixing the Pasta and Liquids: Stir in the penne pasta, chicken broth, heavy cream, diced tomatoes, and Cajun seasoning. Bring to a boil.
  5. Cooking the Pasta: Reduce the heat to low, cover the pot, and simmer for about 15–20 minutes, stirring occasionally, until the pasta is cooked through and most liquid is absorbed.
  6. Finishing and Seasoning: Taste and season with salt and pepper. Serve hot topped with grated Parmesan cheese and chopped parsley.

Notes

For a lighter version, swap half-and-half for heavy cream or use low-fat milk. Fresh parsley brightens the dish, so don’t skip it.
