- 1 lb Cajun sausage, sliced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced

- 2 cups chicken broth

- 1 cup diced tomatoes (canned)
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)

Instructions
- Preparation: Bring together your ingredients. Chop the onion and bell pepper, mince the garlic, and slice the sausage. Measure the broth, cream, and diced tomatoes.
- Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 4–6 minutes.
- Sauté the Vegetables: Add the chopped onion, minced garlic, and chopped bell pepper to the pot. Cook until softened, about 3–4 minutes.
- Mixing the Pasta and Liquids: Stir in the penne pasta, chicken broth, heavy cream, diced tomatoes, and Cajun seasoning. Bring to a boil.
- Cooking the Pasta: Reduce the heat to low, cover the pot, and simmer for about 15–20 minutes, stirring occasionally, until the pasta is cooked through and most liquid is absorbed.
- Finishing and Seasoning: Taste and season with salt and pepper. Serve hot topped with grated Parmesan cheese and chopped parsley.
Notes
For a lighter version, swap half-and-half for heavy cream or use low-fat milk. Fresh parsley brightens the dish, so don’t skip it.
