Description

A comforting twist on traditional egg rolls, this one-pot soup is filled with savory pork, vibrant veggies, and aromatic garlic and ginger.


Ingredients

Scale
  • 1 lb ground pork
  • 1 cup shredded carrots
  • 1 cup chopped green onions
  • 4 cups chicken broth
  • 2 cups coleslaw mix
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil over medium heat until it’s shimmering.
  2. Add the ground pork and cook until browned, breaking it up as it cooks.
  3. Stir in the minced garlic and ginger, cooking until fragrant.
  4. Toss in the shredded carrots and chopped green onions, cooking until they begin to soften.
  5. Pour the chicken broth into the pot and bring it to a boil.
  6. Add the coleslaw mix and soy sauce, stirring well.
  7. Reduce the heat to low and let the soup simmer for about 10 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with additional green onions if desired.

Notes

This soup is customizable; feel free to substitute veggies or proteins as desired. Pair it with crusty bread or rice for a filling meal.
