Ingredients

- 1 lb ground pork
- 1 cup shredded carrots
- 1 cup chopped green onions
- 4 cups chicken broth
- 2 cups coleslaw mix
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- Heat the sesame oil over medium heat until it’s shimmering.
- Add the ground pork and cook until browned, breaking it up as it cooks.
- Stir in the minced garlic and ginger, cooking until fragrant.
- Toss in the shredded carrots and chopped green onions, cooking until they begin to soften.
- Pour the chicken broth into the pot and bring it to a boil.
- Add the coleslaw mix and soy sauce, stirring well.
- Reduce the heat to low and let the soup simmer for about 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional green onions if desired.
