Ingredients

  • 1/2 cup poppy seeds
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup buttermilk
  • Zest of 1 orange
  • Juice of 1 orange
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9-inch cake pan.
  2. Cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
  3. In another bowl, whisk together flour, poppy seeds, baking powder, baking soda, and salt. Gradually add to the creamed mixture alternately with buttermilk.
  4. Fold in orange zest and juice. Pour batter into prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
  5. Cool the cake in the pan on a wire rack completely.
  6. For the frosting, whip mascarpone, heavy cream, powdered sugar, and vanilla until soft peaks form. Spread frosting on the cooled cake and serve.

Notes

For enhanced flavor, use fresh oranges. Ensure ingredients are at room temperature for best results.
