Description

A delightful twist on classic meatloaf, combining lean chicken and rich Parmesan cheese with herbs and marinara.


Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup milk
  • 1 egg
  • Salt and pepper to taste
  • 1/2 cup marinara sauce (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, onion, garlic, parsley, milk, egg, salt, and pepper. Mix until combined.
  3. Shape the mixture into a loaf and place in a greased baking dish.
  4. Top the meatloaf with marinara sauce. Bake for 45-50 minutes, or until cooked through and internal temperature reaches 165°F (74°C).

Notes

Store leftovers in an airtight container for up to 3-4 days. Can be frozen for up to 3 months.
