- 2 cups cooked chicken, shredded
- 1 cup cream cheese, softened
- 1 cup grated Parmesan cheese
- 2 cups cauliflower rice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, cream cheese, Parmesan cheese, cauliflower rice, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Scoop small portions of the mixture and shape them into golf ball-sized balls.
- Place the balls on a lined baking sheet. Sprinkle breadcrumbs on top if desired. Bake for 20-25 minutes until golden brown.
- Allow to cool for a few minutes before serving.
Notes
Serve warm with marinara sauce for dipping or as a side dish. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to two months.
