Description

A hearty pasta dish with lentils that is simple, filling, and full of savory flavors, perfect for a cozy weeknight dinner or meal prep.


Ingredients

  • 200g pasta
  • 1 cup lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried oregano
  • 4 cups vegetable broth
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a pot over medium heat. Chop the onion and mince the garlic.
  2. Add the chopped onion to the hot oil and cook until translucent, about 4–5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add lentils, salt, pepper, and oregano to the pot. Stir to coat lentils. Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for about 20 minutes until tender.
  4. Meanwhile, cook pasta in a separate pot according to package instructions until al dente.
  5. Drain pasta and add to the pot with lentils. Stir to combine and heat through for a minute or two. Adjust seasoning as necessary. Serve hot topped with Parmesan cheese if desired.

Notes

For a lighter meal, pair with roasted vegetables or a fresh tomato salad. Store in an airtight container in the refrigerator for 3–4 days or freeze for up to 2 months.
