Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1 cup corn syrup
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Beat softened cream cheese until smooth. Gradually add sugar, eggs, and vanilla extract, mixing until creamy. Pour over the crust.
  4. In a saucepan, combine corn syrup, brown sugar, butter, and vanilla. Heat until melted and smooth, then stir in chopped pecans.
  5. Pour the pecan mixture over the cheesecake layer. Bake for 55-60 minutes until just set in the center.
  6. Cool at room temperature and refrigerate for at least 4 hours before serving.
  7. Remove the springform pan, slice, and serve chilled.

Notes

For a twist, consider adding a splash of bourbon to the pecan mixture or incorporating chocolate chips into the batter.
