- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 2 cups roasted unsalted peanuts
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Salt to taste
Instructions
- Grease a baking sheet lightly with butter or nonstick spray, or line it with a silicone baking mat. Measure all ingredients and keep them nearby. If you have a candy thermometer, clip it to the pan and be ready to monitor temperature.
- In a heavy saucepan, combine the granulated sugar and light corn syrup. Heat over medium heat. Stir gently until the sugar dissolves and the mixture becomes syrupy and bubbly.
- Add the roasted peanuts to the bubbling sugar mixture. Stir continuously as the mixture cooks. Cook until it reaches a deep golden color, about 8-12 minutes.
- Remove the pan from heat and carefully stir in the unsalted butter, vanilla extract, baking soda, and a pinch of salt. Immediately pour the hot mixture onto the prepared baking sheet and spread it quickly and evenly. Let cool completely, then break into pieces.
Notes
Store in an airtight container at room temperature with parchment between layers. For longer storage, freeze it for up to 3 months.
