Description

A bright, sweet, and tangy party appetizer combining creamy cheddar cheese and pineapple, rolled in crunchy nuts.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped green onions
  • 1/2 cup chopped pecans or walnuts (for coating)
  • Salt and pepper to taste
  • Optional: crackers for serving

Instructions

  1. Drain the crushed pineapple well in a fine mesh strainer. Pat the cream cheese with a paper towel if it seems very wet. Soften the cream cheese by leaving it at room temperature for 15–20 minutes.
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, drained pineapple, and chopped green onions. Season with salt and pepper to taste, mixing again to blend.
  3. Form the mixture into a ball or log shape and roll in the chopped pecans or walnuts until evenly coated.
  4. Wrap the coated cheese ball tightly in plastic wrap and refrigerate for at least 2 hours to set.

Notes

Serve chilled with crackers or fresh vegetables. Can be made ahead of time and stored in the refrigerator.
