A bright, sweet, and tangy party appetizer combining creamy cheddar cheese and pineapple, rolled in crunchy nuts.

- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped green onions
- 1/2 cup chopped pecans or walnuts (for coating)
- Salt and pepper to taste
- Optional: crackers for serving
Instructions
- Drain the crushed pineapple well in a fine mesh strainer. Pat the cream cheese with a paper towel if it seems very wet. Soften the cream cheese by leaving it at room temperature for 15–20 minutes.
- In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, drained pineapple, and chopped green onions. Season with salt and pepper to taste, mixing again to blend.
- Form the mixture into a ball or log shape and roll in the chopped pecans or walnuts until evenly coated.
- Wrap the coated cheese ball tightly in plastic wrap and refrigerate for at least 2 hours to set.
Notes
Serve chilled with crackers or fresh vegetables. Can be made ahead of time and stored in the refrigerator.
