A vibrant and easy weeknight dish combining tender chicken, sweet pineapple, and crisp bell pepper in a savory sauce served over fluffy rice.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup fresh pineapple, diced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Pat the diced chicken dry and season lightly with salt and pepper. Cube the pineapple, chop the bell pepper and onion, and mince the garlic. Have the cooked rice warm or at room temperature.
  2. Measure the soy sauce and chicken broth and keep them nearby. Drain any excess juice from the pineapple to avoid thinning the sauce.
  3. In a large skillet, heat the olive oil over medium heat and add the chicken. Cook for 6–8 minutes, stirring until browned and cooked through. Push the chicken to the side, then stir in the onion, garlic, and bell pepper and cook until tender, about 3–4 minutes. Add pineapple, soy sauce, and chicken broth, stirring to combine and let simmer for 5–7 minutes.
  4. Taste and adjust seasoning with salt and pepper. Spoon over cooked rice and serve immediately, garnished with fresh cilantro or green onions if desired.

Notes

For extra flavor, use fresh pineapple. Adjust sodium levels by using low-sodium soy sauce and a splash of lime to brighten the dish’s flavor.
