Description

A hearty dish combining savory pork meatballs with creamy sweet potato mash, perfect for family dinners or special occasions.


Ingredients

  • 1 pound ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 large sweet potatoes
  • 2 tablespoons butter
  • Salt to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the ground pork, breadcrumbs, grated Parmesan cheese, egg, minced garlic, dried oregano, salt, and pepper. Mix thoroughly.
  3. Form the mixture into golf ball-sized meatballs and place them on a baking sheet. Bake for 20-25 minutes until cooked through and golden brown.
  4. Peel and cube the sweet potatoes. Boil in salted water until tender, about 15 minutes. Drain and mash with butter and salt until smooth.
  5. Serve the pork meatballs on a bed of sweet potato mash, garnished with chopped parsley.

Notes

You can swap pork for ground turkey or use gluten-free breadcrumbs if desired. This dish pairs well with a crisp green salad or steamed vegetables.
