- 1 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 large sweet potatoes
- 2 tablespoons butter
- Salt to taste
- Chopped parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the ground pork, breadcrumbs, grated Parmesan cheese, egg, minced garlic, dried oregano, salt, and pepper. Mix thoroughly.
- Form the mixture into golf ball-sized meatballs and place them on a baking sheet. Bake for 20-25 minutes until cooked through and golden brown.
- Peel and cube the sweet potatoes. Boil in salted water until tender, about 15 minutes. Drain and mash with butter and salt until smooth.
- Serve the pork meatballs on a bed of sweet potato mash, garnished with chopped parsley.
Notes
You can swap pork for ground turkey or use gluten-free breadcrumbs if desired. This dish pairs well with a crisp green salad or steamed vegetables.
