- 4 medium potatoes, diced
- 1 pound kielbasa, sliced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Peel (optional) and dice the potatoes into bite-sized pieces. Chop the onion, slice the carrots, mince the garlic, and slice the kielbasa. Measure the chicken broth and set the cream nearby.
- Heat a large pot over medium heat with a tablespoon of oil. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3–4 minutes.
- Add the sliced carrots and kielbasa to the pot. Cook until the kielbasa starts to brown and the carrots soften, about 5–7 minutes. Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15–20 minutes.
- Stir in the heavy cream and heat through for 2–3 minutes without boiling. Season with salt and plenty of black pepper to taste. Serve hot, garnished with chopped fresh parsley.
Notes
Serve with crusty bread or buttered rolls for dipping. For a heartier meal, offer rye bread or a grilled cheese on the side.
