Description

Ingredients

  • 1 cup protein powder (vanilla or chocolate)
  • 2 cups almond milk (or milk of choice)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • Optional toppings: sliced bananas, crushed nuts, or granola

Instructions

  1. In a blender, combine the ripe bananas, protein powder, almond milk, honey (if using), vanilla extract, and cornstarch. Blend until smooth.
  2. Pour the mixture into a saucepan and cook over medium heat, stirring constantly until it thickens, about 5-7 minutes.
  3. Remove from heat and let it cool for a few minutes.
  4. Transfer the pudding into serving cups and refrigerate for at least 2 hours. Serve chilled, topped with additional sliced bananas, crushed nuts, or granola if desired.
