Description

A delightful twist on a classic breakfast, these Pumpkin French Toast Roll-Ups feature cozy pumpkin spice wrapped in soft bread, golden and crispy on the outside.


Ingredients

  • 4 slices of bread
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1 egg
  • 1/4 cup milk
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • Butter (for frying)
  • Powdered sugar (for serving)

Instructions

  1. Flatten each slice of bread with a rolling pin until thin and pliable.
  2. Mix the pumpkin puree with pumpkin pie spice, spread on each slice of bread, and roll tightly.
  3. Whisk together the egg, milk, sugar, and vanilla extract. Dip each roll-up into the egg mixture to coat thoroughly.
  4. Heat butter in a skillet over medium heat, fry roll-ups seam-side down until golden brown on all sides, about 3-4 minutes. Serve dusted with powdered sugar.

Notes

Best enjoyed warm with powdered sugar, maple syrup, or fresh fruit on the side. Leftovers can be stored in the refrigerator for up to 2 days.
