- 4 slices of bread
- 1/2 cup pumpkin puree
- 1/2 teaspoon pumpkin pie spice
- 1 egg
- 1/4 cup milk
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- Butter (for frying)
- Powdered sugar (for serving)
Instructions
- Flatten each slice of bread with a rolling pin until thin and pliable.
- Mix the pumpkin puree with pumpkin pie spice, spread on each slice of bread, and roll tightly.
- Whisk together the egg, milk, sugar, and vanilla extract. Dip each roll-up into the egg mixture to coat thoroughly.
- Heat butter in a skillet over medium heat, fry roll-ups seam-side down until golden brown on all sides, about 3-4 minutes. Serve dusted with powdered sugar.
Notes
Best enjoyed warm with powdered sugar, maple syrup, or fresh fruit on the side. Leftovers can be stored in the refrigerator for up to 2 days.
