- 2 tablespoons melted butter

Instructions
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
- In a separate bowl, combine the milk, pumpkin puree, egg, melted butter, and vanilla extract. Whisk until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown.
- Serve warm with maple syrup, whipped cream, or toppings of your choice.
