Description

Ingredients

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  2. In a separate bowl, combine the milk, pumpkin puree, egg, melted butter, and vanilla extract. Whisk until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  5. Serve warm with maple syrup, whipped cream, or toppings of your choice.
