Bright, tangy, and creamy, this no-bake dessert tastes like lemon cheesecake but is light thanks to Greek yogurt, with a crunchy graham topping and fresh berries.

- 2 cups Greek yogurt
- 1/4 cup honey or maple syrup
- Juice of 1 lemon
- Zest of 1 lemon
- 1/2 teaspoon vanilla extract
- Crushed graham crackers (for topping)
- Fresh berries (for topping)
Instructions
- Line a baking sheet with parchment paper. Wash and dry the berries. Zest and juice the lemon. Crush the graham crackers.
- In a bowl, mix Greek yogurt, honey or maple syrup, lemon juice, lemon zest, and vanilla extract until smooth. Adjust sweetness if needed.
- Spread the yogurt mixture onto the parchment-lined baking sheet, aiming for about 1/4- to 1/2-inch thickness. Sprinkle crushed graham crackers and scatter fresh berries on top.
- Freeze for at least 3–4 hours until firm, then break into pieces and serve or store in the freezer.
Notes
Press parchment directly onto the yogurt surface before freezing to prevent ice crystals and freezer burn.
