Description

A refreshing pasta salad featuring bright lemon flavors and fresh arugula, perfect for a quick lunch or as a side dish.


Ingredients

  • 8 oz pasta (your choice)
  • 2 cups fresh arugula
  • 1 lemon (juiced and zested)
  • 1/4 cup olive oil
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup Parmesan cheese (shaved)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water to stop the cooking process and cool the pasta.
  2. Combine the lemon juice, lemon zest, olive oil, salt, and pepper in a large bowl. Whisk until well blended.
  3. Add the cooked pasta to the bowl, followed by the fresh arugula, halved cherry tomatoes, and shaved Parmesan cheese.
  4. Toss everything together until well combined. Serve immediately or refrigerate until ready to enjoy!
