- 8 oz pasta (your choice)
- 2 cups fresh arugula
- 1 lemon (juiced and zested)
- 1/4 cup olive oil
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup Parmesan cheese (shaved)
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to stop the cooking process and cool the pasta.
- Combine the lemon juice, lemon zest, olive oil, salt, and pepper in a large bowl. Whisk until well blended.
- Add the cooked pasta to the bowl, followed by the fresh arugula, halved cherry tomatoes, and shaved Parmesan cheese.
- Toss everything together until well combined. Serve immediately or refrigerate until ready to enjoy!
