Description

These Quick Ground Turkey Meatloaf Muffins are easy to make, kid-friendly, and perfect for a simple weeknight dinner or lunch.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/2 cup diced onion
  • 1/4 cup ketchup
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly spray a muffin tin with cooking spray or brush with oil so muffins release easily.
  2. Combine ground turkey, breadcrumbs, diced onion, ketchup, egg, garlic powder, salt, black pepper, and paprika in a large bowl. Mix gently until just combined.
  3. Divide the mixture evenly among the muffin cups, pressing lightly to shape. Bake for 20–25 minutes, until the internal temperature reaches 165°F (74°C) and the tops are lightly browned.
  4. Let the muffins cool in the tin for 5 minutes before removing and letting them rest on a rack for a few more minutes. Serve warm.

Notes

Store in an airtight container for up to 4 days in the refrigerator. Can be frozen for up to 3 months.
