Ingredients

  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. Cream together the butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Gently fold in the rainbow sprinkles.
  6. Drop dough balls onto a baking sheet lined with parchment paper, spaced 2 inches apart.
  7. Bake for 10-12 minutes or until edges are golden. Cool on the baking sheet for a few minutes before transferring to a wire rack.

For thicker cookies, chill the dough for 30 minutes before baking. Don’t overbake; they should look slightly underbaked when taken out.
