Description

These raw vegan carrot cake bites are a bright and healthy snack that tastes like a mini dessert, blending sweet dates, crunchy walnuts, and fresh grated carrot with warm spices for a chewy, lightly spiced treat.


Ingredients

  • 2 cups grated carrots
  • 1 cup walnuts
  • 1/2 cup dates, pitted
  • 1/4 cup shredded coconut
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons maple syrup (optional)
  • 1/4 cup raisins or currants (optional)

Instructions

  1. Measure and prep all ingredients. Grate the carrots finely so they blend easily. Pit and roughly chop the dates if they are large. Break walnuts into smaller pieces if necessary.
  2. In a food processor, add the walnuts first and pulse to break them down. Then add the grated carrots, dates, shredded coconut, cinnamon, nutmeg, and salt. Process until the mixture sticks when pressed between fingers.
  3. No traditional cooking is needed. For a smoother texture, pulse longer but avoid over-processing into a paste.
  4. Scoop small portions (about 1 tablespoon each) and roll into balls. Place them on a tray lined with parchment and refrigerate for at least 30 minutes to firm up before serving.

Notes

Store in an airtight container in the refrigerator for up to 7 days or freeze for up to 3 months. Use soft, sticky dates for best results.
