Description

A quick and bright rice noodle stir-fry filled with fresh vegetables and savory flavors.


Ingredients

  • 8 oz rice noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Soak the rice noodles in hot water until soft, about 10 minutes. Drain and set aside.
  2. Heat vegetable oil in a skillet over medium-high heat. Add minced garlic and stir-fry for 30 seconds.
  3. Add bell pepper, broccoli, and carrot to the pan. Stir-fry for 4–5 minutes until vegetables are tender-crisp.
  4. Add the drained rice noodles to the pan. Pour in soy sauce and oyster sauce, tossing to combine.
  5. Cook for an additional 2–3 minutes, ensuring everything is heated through.
  6. Season with salt and pepper to taste, garnish with green onions and sesame seeds before serving hot.
