Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 cups cheese tortellini
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 2 cups spinach or kale
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Brown the ground beef over medium heat in a large pot. Drain any excess fat.
  2. Add the diced onions and garlic, sautéing until softened and fragrant.
  3. Stir in the crushed tomatoes, beef broth, Italian seasoning, and a pinch of salt and pepper. Bring to a boil, then reduce heat and add the cheese tortellini. Simmer until cooked, about 5-7 minutes.
  4. Mix in the spinach or kale until it wilts. Serve topped with a dollop of ricotta, shredded mozzarella, and fresh basil.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Avoid freezing as the tortellini may become mushy.
