- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 2 cups cheese tortellini
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 2 cups spinach or kale
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Brown the ground beef over medium heat in a large pot. Drain any excess fat.
- Add the diced onions and garlic, sautéing until softened and fragrant.
- Stir in the crushed tomatoes, beef broth, Italian seasoning, and a pinch of salt and pepper. Bring to a boil, then reduce heat and add the cheese tortellini. Simmer until cooked, about 5-7 minutes.
- Mix in the spinach or kale until it wilts. Serve topped with a dollop of ricotta, shredded mozzarella, and fresh basil.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Avoid freezing as the tortellini may become mushy.
