Description

This roasted butternut squash soup is cozy, smooth, and warmly spiced, making it perfect for chilly nights.


Ingredients

  • 1 butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup coconut milk (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Peel the butternut squash, remove the seeds, and dice it into even 1-inch cubes so they roast evenly.
  2. Toss the diced butternut squash with 2 tablespoons of olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper in a large bowl until evenly coated.
  3. Spread the squash in a single layer on a baking sheet and roast for about 25–30 minutes, turning once, until the pieces are golden and tender. Meanwhile, heat a little olive oil in a large pot over medium heat. Add the chopped onion and minced garlic and sauté until soft and translucent, about 5–7 minutes.
  4. Add the roasted squash to the pot along with 4 cups of vegetable broth, 1 teaspoon ground cumin, and 1/4 teaspoon nutmeg. Bring to a simmer and cook for 10–15 minutes so the flavors meld.
  5. Use an immersion blender to puree the soup until smooth and velvety. If you don’t have an immersion blender, carefully transfer soup in batches to a blender and puree, then return to the pot. Stir in 1/2 cup coconut milk if desired for extra creaminess. Adjust seasoning to taste with salt and pepper. Serve hot, garnished with fresh herbs like parsley or cilantro.

Notes

Serve warm with a swirl of coconut milk or a drizzle of olive oil. Can be garnished with toasted pumpkin seeds or fresh herbs.
