Description

A delightful toast topped with warm, caramelized strawberries and whipped ricotta, perfect for breakfast, snacks, or dessert.


Ingredients

  • 8 oz ricotta cheese
  • 1 cup strawberries, hulled and halved
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 tbsp olive oil
  • 4 slices of bread (such as sourdough or whole grain)
  • Pinch of salt
  • Fresh mint for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Hull and halve the strawberries, then toss them with olive oil and a pinch of salt. Spread them in a single layer on a baking sheet.
  2. In a bowl, whisk together ricotta cheese, honey, and vanilla extract until creamy and smooth. Adjust sweetness as desired.
  3. Roast the strawberries in the oven for 15–20 minutes until soft and slightly caramelized. While roasting, toast the bread until golden brown and crisp.
  4. Spread a generous layer of the whipped ricotta mixture over each slice of toast and top with warm roasted strawberries. Garnish with mint if desired and serve immediately.

Notes

Best served immediately after assembly to prevent the bread from becoming soggy. Roasted strawberries can be stored in the fridge for up to 3-4 days, and whipped ricotta keeps for 3 days.
