Description
Warm, cheesy party favorites with a little kick, made from sausage, Rotel tomatoes, cheddar cheese, and biscuit mix.

- 1 pound sausage
- 1 can (10 ounces) Rotel tomatoes with green chilies, drained
- 2 cups shredded cheddar cheese
- 1 cup biscuit mix
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it. Drain the Rotel well.
- In a large bowl, combine sausage, drained Rotel, cheddar, biscuit mix, garlic powder, and onion powder. Mix until evenly combined.
- Form the mixture into small balls about 1 inch in diameter and place them on the prepared baking sheet, spaced about 1/2 inch apart.
- Bake for 20–25 minutes, until golden brown and the internal temperature reaches 160°F (71°C).
- Let the sausage balls rest for 5 minutes before transferring to a serving platter.
Notes
Serve warm with dipping sauces or as part of a snack board. Refrigerate for up to 4 days or freeze for up to 3 months.
